Backyard Fun + A Southern Kick Pimento Dip
I’ve never been one for sports, but I do love a good tradition—and a reason to host. In honor of the Masters, my friend and I set up a simple putt-putt course in the backyard using old terracotta pots we had lying around. It was low-key, a little quirky, and full of Southern charm—exactly my kind of celebration.
Of course, no gathering is complete without a snack to match the mood. Enter: Southern Kick Pimento Dip—a spicy twist on the classic Southern spread that turned out to be the unexpected star of the afternoon. Creamy, bold, and with just enough heat to keep things interesting, it was perfect for pairing with crackers, veggies, or honestly, just a spoon.
While I didn’t use exact measurements (sometimes the best recipes are a little off-script), here’s how I made it:
Southern Kick Pimento Dip (recipe-ish)
Ingredients:
3/4 block of medium cheddar cheese, grated
3/4 block of sharp white cheddar cheese, grated
1 small container of nonfat Greek yogurt (the single-serve size)
1 healthy dollop of mayonnaise
1 whole jalapeño, finely chopped (remove seeds for less heat, or leave them in for an extra kick)
½ sweet onion, finely chopped
Sea salt & pepper to taste
1 small jar of canned pimentos, drained
Chives, finely chopped, for garnish
Instructions:
Combine the grated cheeses in a bowl.
Stir in the Greek yogurt and mayonnaise until smooth and creamy.
Add the jalapeño, onion, and pimentos, then season with salt and pepper.
Mix until everything is well combined.
Top with chives and serve immediately—or let it chill for a bit to let the flavors really meld.
